Smashed Baby Potatoes with Avocado



15 baby chat potatoes

5 tbsp of butter

Salt and pepper to taste

bunch of chives chopped

bunch of parsley chopped

2 cloves of garlic chopped

avocado smashed

sweet paprika

onion powder


4-5 eggs


Boil washed potatoes fully submerged in salted water for 15-20mins.  The key to good potatoes is to add the potatoes to the cold water and slowly raise the heat until boiling and then start the timer. 

Once cooked, drain and arrange on a baking tray, using a drinking glass, squish each of the potatoes into smashed rough cylinders.  Melt butter with garlic included in the microwave (10 secs and check on it and repeat if needed) pour butter over the potatoes.  Place in a 200-degree oven for 15mins, keep an eye on them though,  you just want them crispy so this could take more or less time.

Once crispy, remove from oven.  In a bowl smash up avocado and add in onion powder, salt, pepper, and a squeeze of lemon.  spoon on top of each potato evenly.  Sprinkle a pinch of paprika on each and generously with chives and parsley.

I love to top 4 or 5 of the potatoes with a fried egg. YUM!
