Green Beans (also known as French beans or string beans) are technically a legume, but are commonly enjoyed as a green vegetable. A versatile staple, Green Beans can be steamed or sautéed to serve as a side dish – try adding lemon juice, olive oil, garlic, and/or toasted slivered almonds – and added to curries, stews, and soups like minestrone.
Green Beans are a good source of vitamins (including vitamins C and folate), as well as dietary fibre.
Store unwashed fresh beans in a container in your refrigerator crisper. You can also slice the ends off your green beans and par-steam or blanch them, allow them to cool, and then freeze for 3-6 months.
