While there are a few different varieties of sweet potato grown in Australia, Gold (or Beauregard) sweet potatoes are certainly the most common – in fact, they account for over 90% of sweet potatoes grown in Australia. With a bright orange flesh, they are delicious roasted, steamed, mashed, or baked.
Store in a dark, cool place (but not the fridge) for the best life. They also keep well when roasted and then frozen for later use in soups, stews and sauces. They do not keep their texture for eating whole after freezing.
