Technically, rhubarb is a vegetable, but it is eaten as a fruit. By itself, the flavour can be sour and bitter, which is why most recipes featuring rhubarb will also contain sugar. Stewing rhubarb is one of the simplest ways to prepare it – once cooked, store in the fridge ready to add to yoghurt bowls, porridge, ice cream, or pancakes – though sweet dessert pies are definitely one of the most popular ways to enjoy rhubarb. Remember – the leaves of rhubarb are toxic – so you’ll want to dispose of these, and just stick to enjoying the stalks.
