Sweet Potato and Cashew Dip
A delicious satisfying vegan dip – and saves buying dip in plastic!
This vegan dip is so satisfying – and you can pop it in the fridge for up to a week.
Step by Step Instructions
Bake sweet potato until golden brown (I like to sprinkle some maple syrup on it) Bake whole or in chunks depending on how big and strong your blender or food processor is. I tend to use left over sweet potato from meals as I always cook too much.
Once the sweet potato is baked to perfection, throw all the ingredients in to a blender or food processor except the oil.
Blend all of the ingredients and slowly add the oil a few teaspoons in volume at a time until desired taste and consistency is reached
