Using Up Leftovers

This is one of those meals that is great if you are trying to reduce waste and have some left over rice and chicken from another meal.  If not no worries utilise Marylands and cook your rice at the same time to cut down on cooking time. 




  • 9 cups cooked rice (3 cups uncooked)
  • 2-3 cups cooked chicken (3 Maryland) 
  • 2 Onions
  • 2 zucchini diced
  • 3 sticks of celery thinly sliced
  • 2 carrots sliced/diced
  • 1-2 capsicums
  • 6 eggs, whisked with 1 Tbs of water
  • Tamari and soy sauce to taste

Step by Step Instructions

eStep 1

If you have no cooked rice or chicken us this step to to put your rice on to cook and cook your chicken.  To add flavour I seal three maryland on each side and then cook for about 20 mins on each side on a low heat.  Cool and pull the meat off the bone

Step 2

Using a wok or fry pan pour your whisked eggs in on a high to medium heat until set.  Take out of the pan and slice or dice it up

Step 3

Sautee your veg in butter, starting with the onion and then adding the celery, then carrot cooking each for a couple of minutes and then adding in the remaining veg, stir until combined and warmed through 

Step 4

Use a plate or press to press each ball into a tortilla shape – or roll using a rolling pin or wine bottle.

Step 5

Add in cooked rice, egg, and chicken.  Season with your favourite flavours.  I like to use soy sauce or tamari.


Use whatever veg you have on hand or LOVE in your fried rice.  I have recently started using fried cucumber, I wasn’t keen on the idea at first but cant get enough of it now.  Use corn, peas, spinach, the sky is the limit.
