Banana Breakfast Pudding
Cooked breakfasts don’t have to be just about bacon – add this to the menu and you can still make people happy. Who doesn’t dream of starting the day with pudding?

Invite some friends over for brunch and add it to a buffet of breakfast foods, or have it as the only item for family breakfast. Serve topped with your favourite yoghurt.
- 2-3 Bananas
- 12 Eggs
- 600ml Milk
- 2 cups Plain Flour
- 2 Tsp Baking Powder
- 1-2 Tb sugar
- 1 Tsp cinnamon
If used, add at the same time as the flour.
Youghurt, to serve.
Step by Step Instructions
Using a large casserole dish, that’s at least 5cm deep, butter it well. Thick, and up the sides. It’s okay if you can’t see through the butter!
Chop up your bananas and scatter over the buttered casserole dish
With an electric mixer, in a large bowl, thoroughly mix the eggs and milk together.
Then add the flour and baking powder. And other ingredients if using. Start slowly with the electric mixer, until everything is wet… then on high speed, keep mixing for another 2-3 minutes.
Gently pour the mix over the banana pieces, then place the casserole dish into a pre-heated over at approx 150C for 40-60 minutes – that totally depends on your oven. Cooked when the middle bounces back when pressed.
This puffs up in the oven. Once you pull it out, it will deflate and the sides pull away from the dish. You have not failed, this is what it does *grin*
The texture is cross between pancake and custard.
Raspberries and Blueberries work great too… alone or with the banana
