Ingredients:

Sweet Potato
Carrot
Parsnip
Potato
Brown Onions
Mushrooms
Capsicum
Coconut Oil
Curry Paste
Coconut Milk
Soba Noodles
Coriander or Rocket (optional)

I don’t quite know what to call this dish – it’s like a noodle soup I guess?

First I fry (in coconut oil): a couple of diced onions, a handful of sliced mushies and a diced capsicum.

Once the mushrooms are looking good I stir through a curry paste – I make mine myself, I’ll share the recipe for this another time.

Once the paste is fragrant I add a tin of coconut milk, a litre or more of water and about half a kilo to 750g of diced root vegetables. Mostly sweet potato – but I also add in potato, parsnip, carrot – whatever I have in the pantry really.

Pop the lid on and leave to simmer for about 20 minutes or until your tubers are tender. Then, I add a serve of Soba noodles and a cup of water. The noodles soak up heaps of liquid so if i want this to be a spicy soup rather than a weird pasta dish the water is important.

The noodles take 4 minutes to cook. After this, i might stir through some fresh herbs or rocket if i have them on hand. Serve.
