Pork Roast
3 Oranges (Juiced)
3 Limes  (Juiced)
5 Cloves of Garlic 
6-8 Leaves of Fresh Oregano
olive oil

Mango Salsa Ingredients:
2 Mangoes (Diced)
4 Tomatoes (Diced)
2-3 Leaves of Fresh Oregano
Spring Onions
The Juice of 1 Limes  
Salt and Pepper





Smash your garlic and Salt Together in a mortar and pestle. In your roasting pan, fry onions with olive oil, add garlic and citrus juice after 30 seconds, then oregano, stir until combined into a nice marinate, take off the heat and place 1/3 of the marinate aside.

Puncture Pork Roast with a knife or a fork and place in the marinate, allow to soak for 2-3 hours (or even overnight if you want). Roast Pork for 20-30 minutes in a very hot oven (300c).

Reduce the remaining marinate by about half and use it as a sauce for your sandwich.

Combine all ingredients for the mango salsa and simple toss it together. If you’re a Coriander hater, you can just remove this, or maybe add some spinach or flat leafed parsley.

Place a thick slice of your pork roast inside your buttered batard, add mango salsa and sauce. Service with a selection of Chips, Onion Rings, Corn, Beer, Margaritas or Cocktails.
