Ingredients: 3 tbsp butter 2 cups of rice 5 cups of water or stock 6 cloves of garlic chopped onion powder salt and pepper to taste 1 large zucchini grated half a head of cauliflower grated 1 cup of cheese grated a few splashes of milk

Heat butter in a pot or pan that can hold up to 4 litres. Fry garlic until fragrant. Add rice and cook with garlic for a few minutes. Add in onion powder, salt, and pepper.
Pour in 5 cups of stock or water. If using water I would suggest adding more salt. Bring to a boil and then simmer, stirring occasionally, cook until rice is firm but eatable.
Add in grated zucchini and cauliflower, stir through, cook until your desired level of cookedness (that’s a word right?) I like my veg pretty raw but I understand that is not everyone’s taste. If you are worried about the rice burning or sticking pour in a few tbsps of water or stock, this will help steam the vegetables too.
Once stirred through and cooked to perfection turn of heat and stir through cheese and milk until creamy.
Enjoy as a side dish or add some grilled protein on top
