5 silverbeet leaves.
1 small radicchio, leaves shredded
2 sliced spring onions
1 bunch shredded mint leaves
3 golden beets, roasted then sliced
100g crumbled feta
a handful crushed walnuts
sprinkling of linseeds
olive oil
balsamic vinegar
fresh lemon juice
sea salt
ground black pepper

First stem and shred the silverbeet. Place silverbeet, radicchio, spring onions, mint leaves and beetroot in a bowl.

Sprinkle feta, walnuts and linseeds over the top and drizzle with olive oil, balsamic and a good squeeze of lemon. Season with salt and pepper. This salad is beautiful in a wrap with falafel or chicken or as a side to any meal.
