Avocado and Broadbean Bruschetta



1-2 Turkish Pockets

1 small avocado

Salt and Pepper to taste

1 bunch of fresh mint (chopped)

2 garlic cloves

500g broad beans

2 Tbsp melted butter








If you like broad beans you will love this, if you hate broad beans you will love this.

Take the beans out of the pods, put them in a saucepan and boil them for 30 secs or in a mug or bowl of water and zap it in the microwave for one minute.  Once cooled down peel the outer shell off the bean.

Add the broad beans, avocado, garlic, salt and pepper, mint, and butter to a place in a food processor or place in a bowl and get mashing.

Lightly toast you pocket or bread of choice and spread the avocado bean mixture on to it.  I like to top mine with poached eggs and asparagus.  Enjoy.
