PEAR AND PINK PEPPER PASTE – Ugly Duck (100ml)

Ugly Duck’s Pear and Pink Pepper Paste has somewhat of a cult following. It is perfectly paired with strong flavoured cheeses like blue or washed rind. Pink pepper provides a smokey spice rather than heat, offsetting the sweetness provided by Stanthorpe grown pears.

Be it bumpy, lumpy, scratched, scarred, tiny or surplus – Ugly Duck love all pears and think they are way too delicious to end up in the bin. Farmer Mario from the Stanthorpe region as well as growers in other parts of Australia always end up with fresh pear that isn’t quite perfect and that’s when they step in and take those imperfect pears into the Ugly Duck kitchen.

QUINCE PASTE – Ugly Duck (100ml)

Ugly Duck source quinces from a family farm in the Stanthorpe region of Queensland. Due to the long, slow growing season of quince they often get damaged during hail storms. These fruit show large indented scars and make them unsuitable for the fresh produce market. Ugly Duck are willing to spend some extra work in the kitchen to cut out all those damages and make use of the fragrant leftover fruit flesh.

HALLOUMI Cheese (~250g) – Aphrodite (Ewe & Goat Milk)

Authentic goat’s & ewes milk cheese. Hand-made in Cyprus.

Haloumi was originally created by Cypriot shepherds as a unique and very practical way of preserving surplus milk during the spring, but today most examples are made throughout the year using cows’ milk.

Aphrodite Haloumi is one of the few examples of Haloumi still formed into pockets by hand, the traditional old-fashioned way and is made from a combination of goat’s and sheep’s milk.

Ewes’ milk is high in fat and this is responsible for the delicious brown crust that forms when the cheese is grilled or fried, whilst the goats’ milk provides a firm yet elastic texture, and a subtle lingering lemony tang.

Persian Fetta (275g Jar) – YARRA VALLEY CHEESE

Creamy, salty tang with a lush, buttery finish.

Yarra Valley Dairy’s flagship cheese is their Persian Fetta, a wonderful soft and creamy cow’s milk fetta. This unique cheese is made by first placing the freshly made feta in brine for at least two weeks in order to develop its flavour and texture. It is then washed to remove the excess salt before being marinated in oil infused with fresh herbs & spices.

GOAT’S CHEESE – Meredith Pepperberry Chèvre (150g)

Ingredients: Pasteurised Goats Milk, Salt, Ash, Cultures, Non-Animal Rennet.

Meredith Pepperberry Chèvre is an artisan farmhouse cheese, made by hand using milk supplied only from the farm. Having little distance to travel to the dairy, this milk is the freshest it can possibly be when it starts its transformation into cheese. This freshness is reflected in the final flavour, giving the cheese a creamy, distinctive fresh lemon flavour. The addition of pepperberry imparts a fruity sweetness with a peppery note at the back of the palate. There are subtle undertones of cloves, mint and cranberry. This is a cheese that pairs well with gin and meats such as quail, duck, kangaroo, rabbit and venison.

The Pepperberry is a native Australian ingredient that is high in anti-oxidants and has traditionally been used to aid in digestion and as a treatment for scurvy. A shrub native to woodlands and the cool temperature rainforests of south-eastern Australia, small white flowers appear in summer, giving way to a mass of berries in autumn. Once dried, these berries resemble peppercorns and are a deep purple colour, which marbles the white goat’s milk chèvre with traces of purple.
